I snagged this recipe from Spa Magazine back in 2005 and it has been one of my favorites to serve as appetizers. I love fresh avocado and this “homemade” Lake Austin Spa Guacamole recipe is one of the yummiest I’ve tasted and the perfect center piece for a get together.
2 medium size ripe avocados
1 large garlic clove, minced
1 tablespoon lime juice or fresh orange squeezed
¼ teaspoon salt
2 small Roma tomatoes, diced
2 tablespoons minced onion
1 tablespoon minced cilantro
½ small Serrano chili, seeded and minced (optional)
Cut the avocados in half, lengthwise. Remove the pits and scoop fruit out with a spoon into a large bowl. Add the garlic, lime juice, and salt and mash together coarsely with a fork or potato masher.
Fold in the tomato, onion, and cilantro (and chili if using).
Serve at room temperature with corn chips. Serves 4
